安政元年創業。幕末の名君島津斉彬公は、当時江戸で評判だった菓子職人八島六兵衛を薩摩に招き入れました。
六兵衛は、「明石屋」と名のり薩摩藩御用菓子職人として奉公。以来１６０有余年、明石屋は、代表銘菓「軽羹」
をはじめ、風味豊かな薩摩の伝統菓子を大切に守り続けています。
