What else changed? I killed a lot of bugs, made the sync better between iPhone and Apple Watch and I added nicer animations.

Does anyone know how to activate the dark mode and change the size of the letter?

Have you made a force touch on the watch? There you get a context menu where you can activate the dark mode and change the font size.
