Normal concern to have, I'm going to try and make a very quick summary of the reasons.

Everything you see there about tracking and data collection is related to Unity services that need some of your data to function correctly:
-Unity Analytics, to know what puzzles players are having more problems with, stars collected, etc;

-Unity Ads, personalized ads for example that you can deactivate;

-Unity Diagnosis, to know if people are crashing and where;

-Unity remote config, to configure things without updating the app like the frequency of ads being shown;

-Unity IAP to allow people to make Premium purchases to remove ads and unlock all puzzles;
