The Wet Cure Calculator will enable you to create and refine your own artisan ham, pastrami and salt beef (corned beef) safely at home. Although bacon is traditionally a dry cured product in the U.K. it also supports a wet cured bacon which is typical in the Americas, Australia and New Zealand.
The app does all the hard work for you in regards to ingredient calculations and timings as per your local food standards.
The Wet Cure Calculator offers several different curing methods giving you the freedom to use traditional immersion techniques or modern and quick stitch injection processes. It produces customisable recipes which provide detailed configurations and instructions for following as well as formats for distribution and publication. The recipe can be scheduled as a series of reminders in the iOS Reminders app allowing you to manage the process over long periods of time accurately. Also it allows you to use a variety of meats such as Beef, Pork and Wild Game as well as the way it has been prepared and optimises the recipe accordingly.
It is designed for home cook who wishes to develop their own meat products using a domestic kitchen on a small scale and uses equipment and ingredients readily available to the general public. It is not designed for commercial purposes as different processes are required for the commercial manufacture of processed meat due to the legislation, equipment and quantities involved. It is not suitable for use with pre-mixed cures. If you have a pre-mix you should follow the instructions that came with it. This app is for creating your own cure mixes.
