The drop-down window lists the available windows in the current desktop or Spaces. You can record the video and audio of any source including Youtube...etc

Screen recording requires user permission and nothing is recorded other than the desktop, window or area of screen as selected by the user. The resulting video or audio file is stored on the user's Mac under folder /Downloads for example or whatever the user selected as destination.
