Description
Vinegar is a Safari extension that replaces the YouTube player with a minimal HTML video tag.
It removes ads, restores picture-in-picture, and keeps videos playing in the background.
Note: The "can read information from webpages" text in the permission section is just unfortunate wording. Vinegar needs access to the web page to find the YouTube player and replace it. It's not doing anything creepy!
(By the way, check out Vinegar's companion app, Baking Soda. It's basically a less powerful version of Vinegar, but it works on all websites other than YouTube.)

Ratings and Reviews
Brilliant add-on, but no longer works at the moment
Long story short, this was a 5 star add-on, which made YouTube bearable again. Unfortunately, Google have begun cracking down on add-one like this across various platforms of late, and Vinegar is yet another that has been affected.
Hopefully, the developers are aware of this, and will be working to update it, but I think that people thinking about purchasing this should be aware to hold off for now.

I can’t speak highly enough if this safari extension - adding real value back to the end user so that they can manage what content they get shown in a powerful yet simple tweak. No setup required, just enable in settings.
Harmonise your experience by removing all the quirky and janky web video player bloat interfaces designed to keep you watching advertisements and less time watch thing the content you want. Seriously this extension is worth its weight in gold…
Your time has a value, spend it wisely, buy this extension and never have to be funnelled through online video based ads again. Immensely grateful to this developer.
