Needs a bit more logic

Basically, I like this app. I've been looking for a racing game for a long time and now you created one.
Compared to others it has great 3D quality and movements.
I like the breeding option especially (the main thing I always fall for)

However, continue talking about the breeding I don't get it at several points:

I use the best quality male (Admiral) and best female (Biscuit). Both the most expensive and have the best working qualities. However, I generally get foals with the lower quality attributes than their parents.
Where is the logic?
The price for mating is high and even tends to rise, but how is this justified when I can't even recompense it by selling the offsprings?

I need to see the progression in my "work".

One more thing with the meaning I don't get:

Some of the low quality horses I get from breeding appear to have much higher value than the good quality ones.
What does it mean?
(I tried to breed them to high valued horses as well but didn't get any increase again)

Anyways, thanks for the game!
I'm a fan for now :)
