锅，古称“古董羹”因食物投入沸水时发出的“咕咚”声而得名它是中国独创的美食，历史悠久。据考证。东汉时期即有火锅。 　　唐代白居易的问《问列十九》诗：“绿蚁新酷酒，红泥小火炉。晚来天欲雪，能饮一杯无？”就惟妙惟肖地描述了当时吃火锅的情景。到宋代，火锅的吃法在民间已十分常见，南宋林洪的《山家清供》食谱中，便有同友人吃火锅的介绍。元代，火锅流传到蒙古一带，用来煮牛羊肉。至清代，火锅不仅在明间盛行，而且成了一道著名的“宫廷菜”，用料是山鸡等野味。据说乾隆皇帝吃火锅成癖，他曾多次游江南，每到一地，都备有火锅火锅。相传，他与嘉庆元年正月在宫中大摆“千叟宴”。全席共上火锅1550多个，应邀品尝者达5000余人，成为历史上的一次火锅胜宴。
