This release brings ganache into the new recipe editor and lets production plan in what it actually sells: packs, kilograms and litres. Recipes, ingredients and products can now carry photos. Ganache in the new editor Ganache has its own tab in the recipe editor, with water activity and shelf life always in view. Balance aims at water activity as well as sugars, fat and cocoa solids, across fifteen schemes from bonbon and truffle to a pourable glaze and a chocolate sauce for ice cream. The assistant knows ganache too. The classic editor is gone; what it did, the new one does. Packs by weight or by volume A pack states its contents the way your market does: grams and kilograms, millilitres and litres, or fluid ounces, pints, quarts and gallons. Presets for the US, for Europe and for markets that sell by weight: a 330 g cup, a 2.5 kg catering tub, a pint. For a pack sold by weight, overrun no longer changes how much mix it takes, and the app tells you when 330 g will not fit the cup. Plan in packs Plan and produce in kilograms of mix, kilograms or litres of ice cream, or in packs: 1,200 cups of 330 g and 400 of 230 g. The app works out the mix and every ingredient in it, and after the batch the finished goods are filled in from the same list. Packs and products are edited and removed where you see them, the recipe card included. Photos Add photos to recipes, ingredients, packs and products: take one with the camera, pick it from Photos or a file, or drag it in. The first one is the cover. The display case shows each product's photo, or its recipe's. Recipes and ingredients are exported with their photos. The whole ingredient from a recipe Tap an ingredient in a recipe to see all of it, with its name on the label, its price and possible traces, and edit it right there. On Mac the editor opens in its own window, next to the recipe. Fixed Nutrition labels now count the carbohydrates of ingredients that had none entered, so the figures for some recipes go up. Minerals and vitamins were printed in grams as if they were milligrams; they read in milligrams now, in the ingredient editor too. A share under one percent no longer shows as 0 %.

This release rebuilds the app around the two things you open it for: a recipe and its ingredients. A home that knows where you were One layout on iPhone, iPad and Mac. Home opens on the recipes you were working on, what needs your attention, what was made lately, and your tools. Search finds a recipe, an ingredient or a tool from anywhere, and a batch in progress stays in sight. A new recipe editor When a figure leaves its range, the editor tells you how to bring it back: how many grams of which ingredient to add or take out, and what else that move fixes or breaks. The one you pick is applied at once, and on iPhone you feel a light tap when a figure comes into range. Lines you lock stay as they are. Set a serving goal, display case, pozzetto or freezer, and the PAC hint points the right way. A batch size and machine presets never change the recipe itself. The classic editor is still one switch away in Preferences. Every save is a version The draft writes itself as you work, so nothing is lost when the app closes. Each save becomes a version you can compare with the current one and go back to. The Ingredient Studio One editor instead of three. The assistant proposes values and you decide what goes in. The library is a table on Mac and iPad, edits many ingredients at once, keeps an archive and shows up in Spotlight. Search understands a phrase, the card shows similar ingredients from other libraries, and deleting an ingredient names the recipes that use it, with undo. Closer to the science PAC and POD worked out from the composition: polyols, syrups by their DE, salt. Sugars of the built-in ingredients broken down per USDA. Stabiliser and emulsifier as a share of solids; cocoa, pectin and alcohol counted in the solids. The hardness factor of chocolate and nut pastes now sits on the PAC scale, so the serving temperature moves for them as it should. Dose limits belong to the recipe line, so one ingredient can have different limits in different recipes. Fixed Water activity in the fridge read up to 11 % low, so a mix looked drier and safer than it is. It is right now. Also in this release The recipe library is a table with columns on Mac and iPad and compact rows on iPhone, and finds a recipe by what is in it. Number fields take arithmetic: 120+30, ×1.1. This is the release where the app stops ending at the recipe and follows it to the floor. Ingredients that fill themselves in Scan a barcode, or import from USDA FoodData Central and Open Food Facts. Every ingredient can now carry its own ingredient list, its allergens and its claims, which is what lets a label open a compound ingredient up instead of just naming it. Labels you can edit and print Ingredient list, allergens, claims and the per-100 g figures, in four shapes including the EU and FDA tables. Percentages are optional, milk fat can be declared on the mix rather than diluted by inclusions, and it prints at the size it was designed at, as PDF, on paper or as plain text. Stock, suppliers and the week ahead Deliveries become lots with their own price and expiry date, production takes the oldest first, and a batch is costed at what those lots really cost. Plan the week and the app tells you what it will need, what is short, and the last day to order it. Seven calculators for the questions a shop asks Litres and tubs out of a batch, what a reduction became, today's fruit against the recipe's, two recipes side by side, how free the water is, whether a mix will curdle, and where the sweetness and the softness each come from. A guide for every part of it All the guides now live in one place, and a question mark on a screen opens the one that explains what is on it. Also in this release Pro and Pro+ are now separate: Pro is the formulation app, Pro+ adds the production side. Without a subscription the sample recipe stays fully editable, plus one recipe and three ingredients of your own. If a subscription lapses, everything you wrote stays visible and readable. And a batch size that no longer promises more litres than it can fill.
