All the last owner left you is a red ledger and 200,000 yen of debt. Set your prep and your prices, open the doors, and read the books at night. You inherit a diner that is going under. In the morning you decide how much to prep and what to charge, and pick one move for the day. At noon you open the doors and watch who sits down. At night you read the ledger. Sales, ingredients, wages, rent. What is left? You repeat this for 12 days, then close the books. The point is not to play well. The point is to find out why this place is failing, before it does. Before the final reckoning you name your verdict. Nobody knows the place? Ingredients cost too much? The prices are wrong? Which line of the ledger bled the most? Which customer's remark gave it away? Every cause you name correctly is recorded, and unlocks new moves for the next run. So the first run does not have to be saved. You learn this diner by losing it.
