Want to be the best kokoreç maker in town? Take the order right, build the tray right, turn no one away. Keep the street happy and tomorrow night your window fills up.
A customer appears at your window and tells you what they want. You have two choices: say "Right away!" and open the tray, or tell them you're out and turn them away.
But the game won't count your stock for you. You only see what you have left once the tray is open. You can step back, but the customer's patience keeps ticking.
YOU BUILD THE TRAY
Pick the item, set the portion, add the chili, add the salad, don't forget the drink. Get it right and you earn money and tips; get it wrong or leave something out and the receipt turns red, and the street talks.
THE NIGHT ENDS, THE BILL COMES
Revenue, costs, satisfaction. Restock from the wholesaler, choose your pricing, grow your stall. Tonight's satisfaction decides how many people come to your window tomorrow night.
YOUR PRICES, YOUR CALL
Cheap, normal, expensive. Go cheap and the street loves you but profits melt; go expensive and the till fills up but your name gets around. Stay off normal for too long and the bill arrives at the end of the day.
GROW YOUR STALL
Mussel counter, soup cauldron, grill, dessert case. Every piece of equipment grows your menu and comes with plenty of starter stock; each one is a goal worth saving up for.
WHAT'S ON THE MENU
Kokoreç in a sandwich, in half a loaf or on a plate, İzmir style, liver, sweetbread, köfte, sucuk. Tripe, lentil, head-and-trotter and tuzlama soups. Fried mussels, stuffed mussels. Sütlaç, cold baklava, carrot-slice baklava. Ayran, şalgam, gazoz, soda.
WHO SHOWS UP
The local shopkeeper, the taxi driver, the night-shift worker, the student, the tourist, the fussy auntie, three different football fans, a courier, a biker, a nurse, a police officer, a magician and more: 28 customers in all. Each has their own patience, budget and favorites.

YOU CAN GO BUST
There are two ways to lose: the street turns its back on you, or debt drowns you. Both show up a night in advance, because the reason for every loss is written on the receipt.
