Enter how many dough balls you want, how much each one should weigh and the hydration you are after. The app works out flour, water, salt and yeast, the yeast down to a hundredth of a gram.

Tell it how many hours you have and at what temperature, all at room temperature or with a cold maturation in the fridge, and Pizza Alchemy works out the right dose so you never end up with a heavy, under-proofed dough. Fresh yeast, active dry, instant dry, or a liquid or stiff sourdough starter.
