Gelato Maestro — The Recipe Balancing App for Gelato and Ice Cream Professionals and Enthusiasts From the first idea to the finished label, Gelato Maestro guides every step of your gelato and ice cream production. Design, balance, cost, scale, freeze, produce and print — all in one place, with the precision the craft demands. — RECIPE DESIGN — • Build recipes from a curated library of over 200 ingredients, with the catalogue growing in every update. • Every ingredient comes with full composition data, PAC and POD values, all carefully curated. • Duplicate any ingredient or create your own with built-in PAC and POD calculators. • Save any recipe back into your ingredient library as a compound ingredient. — SMART BALANCING — • Key quality indicators displayed as precise, easy-to-read gauges. • Auto Balance retunes your mix in one tap to hit your target indicators. • Auto Balance by Cost reaches your targets while minimising ingredient cost. • Lock individual ingredients to keep them fixed while the balancer works around them. • Fine-tune your indicator targets to match your house style and personal preferences. • Set serving temperature and target frozen water content for both sorbet and cream-based mixes. • Plot your freezing curve to predict scoopability and behaviour at temperature. — AI ASSISTANT (BRING YOUR OWN AI) — • Connect your own AI provider and model with your own API key — you choose who you trust. • Ask questions in natural language about ingredients, balancing and production techniques. • Let the assistant suggest recipe adjustments, propose ingredients and help you troubleshoot a mix. • Every change is yours to approve — the AI proposes, you decide. • Your keys and conversations stay on your device. — COST AND PROFITABILITY — • Add ingredient costs and a selling price to see batch cost and revenue update instantly. • View insights into the production and financial performance of every recipe. — PRODUCTION FLOW — • Rescale any recipe to your exact production target. • Incorporate overrun directly into your production calculations. • Track ingredient quantities live as you weigh and dose your mix. • Speak Ingredient mode in the Make Gelato screen reads each ingredient and weight aloud — keep your hands on the scale and your eyes on the mix. • Mark batches as produced to build a full production history. — LABELS AND COMPLIANCE — • Print ready-to-use nutritional labels in US and EU formats, generated from your recipe composition. — HISTORY AND IMPROVEMENT — • Full production history for every recipe. • Backtrack ingredient changes to understand how your mix evolved. • Reset or branch a new recipe from any previous production batch. • Rate and annotate each production run to refine your craft over time. — YOUR DATA, YOUR RECIPES — Gelato Maestro does not collect your recipes or your custom ingredients.
