I’ve loved this app for years thinking it was the perfect calender app for me. Recently I've noticed a change - when I add a new thing to the calender, the event has always by default been connected to my iCloud mail. But suddenly the app has chosen a different one of my mails which I cannot delete. How can I change this back?

It looks like your Default Calendar has been changed in the app. To set the default calendar for your events, please open Calendars > Menu icon > Settings > Default Calendar > Selec the preferred calendar. Hi! I’m sorry you’re experiencing this. I just want to clarify that Calendars relies on syncing with your connected accounts and doesn’t store any data on its own. Moving forward, please launch your iOS native Calendar app or Google/Outlook Calendar web page and check if the events are there (depending on the account connected to Calendars). I would also suggest you re-login to the account connected to Calendars or toggle 'Display Local Calendars' Off and On again in the Local Calendars section. Also, launch your iOS Settings → Apps → iOS "Calendar" → Sync → make sure that the 'All Events' option is selected. In conclusion, please check that Calendars app has full access to the local calendar in iOS Settings app → Apps → Calendars → make sure to select "Full Access" option for Calendars.
