 京菜(Beijing Food)又称京帮菜,它是以北方菜为基础,兼收各地风味后形成的。北京人日食三餐,以午、晚为主。早饭称早点,或去早点铺购买,或在家吃头天的剩饭。旧时大宅门里的早点多由指定的早点铺子送早点上门,品种也是市面上常见的烧饼、炸糕、粳米粥之类。有地位的人家认为油饼是大路货,是不吃的。从前的下层市民,很少吃到大米和白面,午、晚饭的主食主要是窝窝头或菜团子、“贴饼子”(即一面焦黄的玉米面饼子)。经济条件好的,能吃到机米(糙米)饭,吃粥(又有大米粥、小米粥、高粱米粥、绿豆粥、玉米面粥之分)或热汤面(有白面或杂面之别)。菜肴多是用萝卜、白菜、土豆、西红柿熬菜或生拌黄瓜、拌白菜心、拌萝卜丝等凉菜,也有以酱豆腐、臭豆腐(腐乳)、韭花酱、芝麻酱、辣椒糊及咸菜佐食的。极少吃炒菜。即便吃炒菜,也多素炒。
