豫菜(读音:yù cài),又名豫宴 ,一般指的是中原(河南)菜系 。它是对在带有中原传统文化内涵的烹饪理论指导下,运用具备中原地域特点的技术和材料所制作的菜肴、面点和筵席的总称。
豫菜讲究五味调和,质味适中。“中”是指豫菜不偏甜、不偏咸、不偏辣、不偏酸,而于甜咸酸辣之间求其中;“和”是指融东西南北为一体,合甜咸酸辣于一鼎,而求一味。
当代豫菜是在原宫廷菜、官府菜、市肆菜和民间菜的基础上,根据中原物质条件,逐步积累演变而发展起来的。
而有“烹饪鼻祖”和“中华厨祖”之称的伊尹便出生于河南(一说洛阳伊川,一说开封杞县空桑)。他创立的“五味调和说”,传承两千年,所以豫菜又被称为“八大菜系之母”。
豫菜坚持五味调和、质味适中的基本传统,突出和谐、适中,平和适口不刺激是其显著特点。各种口味以相融、相和为度,绝不偏颇是基本原则。
作为中原烹饪文明的代表 ,发源于开封的豫菜,虽然在南宋以后成为中国烹饪的地方帮派,但因地处九州之中,一直秉承着中国烹饪的基本传统:中与和。“中”是指豫菜不东、不西、不南、不北,而居东西南北之中;不偏甜、不偏咸、不偏辣、不偏酸,而于甜咸酸辣之间,求其中、求其平、求其淡。“和”是指融东西南北为一体,为一统,融甜咸酸辣为一鼎而求一味,而求一和。中与和为中原烹饪文化之本,为中华文明之本。从中国烹饪之圣商相伊尹(开封杞县空桑村人)3600年前创五味调和之说至今,豫菜借中州之地利,得四季之天时,调和鼎鼐,包融五味,以数十种技法炮制数千种菜肴,其品种技术南下北上影响遍及神州,美味脍炙人口。 豫菜口味居中,和众家之长,兼具南北特色。
