コーヒー(珈琲・coffee)は、コーヒー豆(コーヒーノキの種子)を焙煎し挽いた粉末から、湯または水で成分を抽出した飲料のこと。抽出前の粉末や粉砕前の焙煎豆も、同じくコーヒーと呼ばれることもある。
コーヒーは世界で最も多くの国で飲用されている嗜好飲料である。家庭や飲食店、職場などで飲用され、またコーヒーの専門ショップも多数存在する。歴史への登場はアルコールや茶には遅れるが、人類との関わりが最も深い嗜好飲料と言える。 また世界各国で、コーヒーを提供する場の喫茶店(コーヒー・ハウス、カフェ、カフェー)は近代、知識人や文学、美術などさまざまな分野の芸術家の集まる場として、文化的にも大きな役割を果たしてきた。 更に、石油に次いで貿易規模が大きい一次産品であるため、経済上も重要視されている。大体北回帰線と南回帰線の間(コーヒーベルト)の約70箇国で生産され、アメリカ、ヨーロッパ、日本など全世界に輸出されている。カフェインに代表される薬理活性成分を含むことから医学・薬学の面から研究の対象となっている。
