Description
Vinegar is a Safari extension that replaces the YouTube player with a minimal HTML video tag.
It removes ads, restores picture-in-picture, and keeps videos playing in the background.
Note: The "can read information from webpages" text in the permission section is just unfortunate wording. Vinegar needs access to the web page to find the YouTube player and replace it. It's not doing anything creepy!
(By the way, check out Vinegar's companion app, Baking Soda. It's basically a less powerful version of Vinegar, but it works on all websites other than YouTube.)

A must have
Works fantastic on both mobile and desktop. Also, respect for the developer for going with one-time purchase instead of a subscription model.
Neat, but the interface needs to be more robust
This works generally well and presents a much neater player for YT videos than default, as well as adding support for picture-in-picture. But at the same time, video chapters have been there for what, half a year now? Vinegar does not support them at all.
Also, the idea to have a quality selector on top for windowed videos is good. But when a video gets expanded to theater or fullscreen, it totally disappears, and to change quality, one has to minimize the video, select the quality and maximize again. Why not hide it in the three-dot menu together with subtitles and playback speed?

You could improve the live playback interface or give option to automatically turn off the Vinegar on a specific tab when it detects live broadcasts.

The menu to set playback speed is part of the system UI and it's not customizable.
But you can change the playback speed in 0.25× with the "<" and ">" keys.
