Cottura – Pizza Dough Calculator & Proofing Planner
For everyone who leaves nothing to chance with their pizza dough. Cottura helps you calculate amounts cleanly and plan the proof so that exactly the pizza you have in mind comes out of the oven.
Smart yeast calculation
Instead of generic tables, Cottura uses a temperature-based model (Q10, reference 20 °C). You set hydration, salt, oil and your proofing stages and temperatures – the app calculates the right amounts of fresh and dry yeast. The model has been checked against common references and delivers consistent results.
Pizza styles with sensible defaults
Napoletana, New York, Tonda Romana, Al Taglio, Pinsa Romana, Detroit, Chicago Deep Dish, Sicilian and Focaccia. Each style comes with tuned ranges for hydration, salt and oil, plus typical proofing plans and baking recommendations. Plus a free mode for your own recipes. For every style you can choose three time profiles: fast (~24 h), normal and long (48–72 h).
Plan the proof – forward or backward
Whether you plan from the dough start or from your desired serving time: Cottura works out the schedule. Example: "Pizza on Saturday at 8 pm" – and you immediately see when to start the dough. New: with the fixed finish time you set the serving moment and see the date and time for every proofing stage – if you start late, the plan adjusts automatically without moving the finish time.
Bake mode for real life
A large, easy-to-read ingredient view and step-by-step kneading instructions – by hand, spiral or stand mixer. The display stays awake. A timer for every proofing stage with local push reminders.
Alarms & stages under control
At each stage change Cottura rings like an alarm clock (iOS 26+), plus reminders 30 and 15 minutes ahead. Confirm a stage right in the reminder – if you were late, the plan recalculates and can keep your finish time.
Tomato sauce included
The sauce calculator tells you how many cans and how much salt, oil and basil you need – matched to style and number of pizzas.
Cottura learns from your ratings
If the pizza was under- or overproofed, Cottura adjusts the yeast for that style next time. Plus targeted tips, e.g. when the rim had no bubbles or the dough was hard to stretch.
Ice calculator for target dough temperature
Calculates the water or ice amount needed for your desired dough temperature. Especially helpful in warm environments.
