Choose a stone mill for traditional character, a centrifuge for clean consistency, or a hydraulic press for economy. Then decide how to handle the oil — bottle unfiltered as Olio Nuovo for maximum freshness, paper-filter for shelf stability, or rack with natural settling for a balance of both.
