The preferred way of customizing appearance (i.e. if you want dark menus but still a light document background) is via theme extension. To install a theme extension, click on the more themes button next to the theme drop-down in LibreOffice Themes section. Once installed, the theme should appear in the schemes list.

More than I thought
I am a very buzy person and I do not write reviews. However, this is an exception. To prove it, I am taking time out of my schedule to write this. A few year ago I purched LibreOffice as a backup to my MSOffice. It was never utilized till abour 2 weeks ago. For some reason my MSOffice stopped working. It was laptop based not 365 version. I tried for 3 days attempting to restore. MSOffice. Nothing worked. I cannot justify there subscription prices. Nor do I trust them. So, I was forced to start using LibreOffice. WOW! it is very mature. It got me out of a tough situation. I use it exclusively now. MSOffice was removed from my laptop. Never to be reinstalled. I use it in place of MSWord and Power Point. So far all of my created files work fine in LibreOffice. It even handles the drop down boxes that many of the Documents I use have.

So many issues. But love the privacy
My biggest complaint is that it doesn’t update to the current build available on the website. I seem to be several versions behind and I’m wondering if this has anything to do with the reason dictation doesn’t work well. I spend a lot of time dictating into. The app when I'm done it disappears looks like it has been completely erased even though I'm watching it appear on the screen. I hit return it disappears. I hit another button and everything reappears, but you have to be very careful so then you just have to do a whole bunch of backpedaling to find what you just dictated. I pay for this app and find it frustrating because I am working with a disability. This app is making everything 10 times harder. I would also love the ability to customize my toolbar to get rid of the things. I don't find useful and putting things in that I use on a regular basis like the increase text size, where everything is uniformly increased in size and not choosing a font size because then that changes all of my headers and subheader sizes and it’s a real pain. I cannot find in the app a place to check for updates. The web says I can go into help and then look for updates, but that is not an option. It's not there.
Works on my MacBook Pro, a mess on my iMac
Installed this first on my main machine, a 2017 iMac with Monterrey OS and 64Gb of RAM. There, the app is a complete mess. It doesn't respond to MagicMouse scrolling; double-clicking a word does not select it; it takes three attempts every time to drag across a phrase or sentence to select it; and what limited scrolling I can do by clicking in the scrollbar often results in visually split pages right down the middle, where the left half of the screen displays (for inatnce) page 2 and the right half hangs on page 1. A miserable experience, so I was going to leave a one-star review. Then II found that LibreOffice works fine on my MacBooks Pros from 2018 and 2020. Not sure what's going ohere n but especially for a paid app I expect excellent compatibility, not just with SOME Macs.
